A question about the scotch-irish, any information is greatly appreciated!!?

My grandmother told me I am from scotch-irish, french, and german ancestory. The french and german really doesn't interest me cause I know where both places are on the map and know what types of people come from those areas of the globe. What I am wondering about is that hyphen in between scotch and Irish. Any info would help. Thanks
